The other day I had a craving for fruit. Lucky for me I had a plethora of fruit, fresh and frozen, at hand. I decided to start with an apple cut in kind of chunk slices, which is now a new culinary term.
I put the apple chunk slices into a small skillet with a bit of water, covered the pan, and simmered until I got tired of waiting. I sprinkled on a bit of cinnamon, covered the pan again, and enjoyed the aroma.
Eventually, which was about 10 minutes later. I tossed in some frozen wild blueberries and frozen sweet cherries. Cover, simmer. Another 10 minutes.
OMGoodness and three cheers or something for fruit.
In order to serve this with a little more sweetness I put this compote next to banana slices. Almost too pretty to eat.
This makes a wonderful snack and also a great blog post because it’s so simple I didn’t have to write it in a recipe format!
Did you know that apple chunk slices sautéed with just a bit of water and some cinnamon make a great sugar free, chunky applesauce? Trust me, it’s awesome. If you leave the peels in place (and why wouldn’t you) it’s even more awesome because it’s simply bursting with good fiber. Happy potty time!
