What to do with sweet potatoes that you’ve been staring at for a good while, all the time thinking that you’re really not in the mood for a plain sweet potato. This will help.
3 sweet potatoes
1 white potato
1 t ginger
1 t cumin
1 t coriander
jalapeno, finely chopped – you decide how much
2 T arrowroot or cornstarch
salt to taste
oil for frying
The potatoes should be cooked and ready to mash. Mash them. Mix in all the other ingredients except for the oil.
Heat the oil in a pan. Form the potato mixture into patties. Fry them until nicely browned on both sides. Voila!
I think, because these have an Indian flair, I’d serve them with lentils and a green veggie. That would make a colorful plate.
I also think, which is unusual, that I’d like these with a spicy aioli. In my book that would be mayo with some tabasco in it. I like to cut right to the chase, whatever that means.
