ITALIAN THOUSAND ISLAND

Company!  I was serving a salad bar.  All was calm.  All was bright.  For salad dressing I put some oil and vinegar and a few herbs and salt in a jar and used my immersible blender stick, my magic wand, to mix it all together.  It emulsifies when you do that.  That means that it’s not a clear dressing but rather opaque.  Still tastes the same.

After the festivities I still had a bunch of my wonderful Italian dressing left.  After a few days I needed a change.  I decided to give the dressing a 1000 Island twist.  That means adding mayo and ketchup, about a tablespoon of each.

It would actually be easy to turn the Italian into 1000 Island by simply adding some pickle relish.  I decided to forgo the pickle relish because I didn’t have any.  Logic abounds.

The moral of the story.  Don’t be afraid to answer the question, “I wonder what would happen if I…”  Do it and find out.  What’s the worst thing that could happen?  Hmmm
