I’m back on one of my missions – to downsize my life. Right now I’m working on the fridge, obligating myself to eat what’s there rather than making something new. Quick, efficient, and cheap. or as they say in polite society, economical.
This morning the results was a combination of some carrots cut into matchstick size, diced onion, diced tomato, Italian seasoning, broccoli, parmesan cheese, and an egg in the middle. It looked like this.
I did two pictures because the second picture, where the egg was actually cooked through, was taken while the goodies were giving off a cloud of steam. This kept steaming up my camera lens. Publishing just picture one would probably make some people nauseous and cause them to wonder if I truly eat my eggs nearly raw. I don’t.
Bottom line – There’s always something lurking in my fridge that can be used up. Doing this at breakfast gives me a good start to the day. It gives me the feeling that the detritus that fills my life is diminishing. Translation: less mess.
