Last year at an annual gathering of hobbyists, we put out an invitation to the assembly to come to our house on Thursday night for a taco bar. Only about 15 or 20 people showed up. We had a great time.
In fact, the evening was so much fun that we decided to repeat the gathering this year. Because word spread about the fun we’re expecting a tad more people this year. Maybe up to 40. I’m ready, I said, before I began browning ground beef for taco meat. Before I realized that I didn’t have any taco seasoning.
Enter the Internet with a recipe for taco seasoning. Honestly, with the Internet, a recipe blog is almost not needed.
2 Tbsp. chili powder.
2 tsp. ground cumin.
1 ½ tsp. garlic powder.
½ tsp. onion powder.
1 tsp. dried oregano.
¼ tsp. paprika.
2 tsp. sea salt.
¼-½ tsp. cayenne pepper (optional)
2 cups pureed diced tomatoes
Blend all the spices. Mix into 7 pounds of browned, ground beef, which is not that easy to say. Stir in the tomato puree.
I opted out of the cayenne. I’ll have some jalapeños and tabasco on the side for those who want to put a bit of zip into their creations.
Of course, we’ll have margaritas, wine, and New Glarus Brewing Company (Only in Wisconsin) Totally Naked beer on hand. And for a final touch, two store bought cakes that will blow the roof off. I know enough to always end on a sweet note.
