A while back I posted a snack idea involving bananas and nut butter. Being an adventuresome person, whose sense of adventure is often greater than my common sense, I decided to make a nut butter. It turned out gritty. That recipe will not follow.
And then I went to my old friend, the Internet, and found a recipe for nut butter that seemed doable, i.e. idiot proof.
4 cups raw almonds
Pre-heat the oven to 350 degrees.
Spread the almonds on a baking sheet that’s covered with parchment paper.
Bake at 350 degrees for 10 minutes. Remove the almonds from the oven and allow them to cool to room temperature. Taking the almonds off the hot baking sheet might speed the process. (Another great moment of logic!)
Note: you can skip the roasting step but then you might have to add about 3 tablespoons of a neutral oil to the mix. Almond oil might be a good choice.
Pour the cooled almonds into your Vita-Mix. Blend on high for about one minute, using the tamper to continue to push the almonds toward the blades. Voila! This really worked!
Now you’re ready to enjoy this wonderful nut butter with banana. OR –
To one-half cup of nut butter stir in a bit of curry paste and juice from one lime. Add a bit of hot water and whip it to get it to a desired consistency. That would be the consistency that you desire.
This is delicious over veggies or when used in a veggie rollup in place of mayo. Go Online and take a look at all the other good reasons to eat almonds.
Think I’m going to try other nuts. Cashews might be delicious. Will let you know.
