CHOCOLATE AVOCADO PUDDING

So now I have some frozen avocados that thaw to a creamy consistency along with some fresh mint leftover from my watermelon salad creation.  What to do?

Find a mint recipe that just might have some avocado in the mix.

INGREDIENTS:

1.5 frozen avocados, thawed

1/4 cup raw honey

1/4 cup cacao or cocoa powder

1/4 cup water

2 t vanilla extract

3 or 4 mint leaves, minced

dash of salt

DISTRUCTIONS:

Combine the avocado, honey, cacao powder, vanilla, mint, and salt in a blender or food processor.  Gradually add the water, one tablespoon at a time, until you like the consistency.

Place your creation into a pretty glass with a mint leaf on top and admire it.

This makes one serving if you’re eating with me.  However, because this is such a rich dessert, I’d opt to use it as a topping on pound cake with cherries or strawberries added.  You’d only need a small dab of the chocolate concoction and could probably serve four this way.

One last note  – The mint leaves make a big difference.  When I first made this I forgot to add the mint.  I put the pudding back into the processor and added the mint.  Bingo!  Good stuff.
