SALAD THREESOME

“Skip the diet.  Just eat healthy.”

Love the idea of eating healthy.  Also love the idea of eating food that I enjoy.  What else? Love the idea of keeping my fridge in order and not overrun with leftovers.  Solution?  Combining.

After a recent sausage and salad lunch I had a number of foods hanging around on the center shelf of my fridge.  Mostly salads.  I tried this combination.

INGREDIENTS:

1 cup leftover corn and black bean salad

1/2 cup potato salad

1 T nut-less pesto

1 cup fresh spinach

DISTRUCTIONS:

Combine the first three ingredients.  Serve over the spinach.

Remember that amounts can vary according to the foods lurking in your fridge.

Remember to be wary of sameness in your life.  Exploring new things in life can begin by  simply being adventuresome with your meals.

Remember to wear your good underwear when you go out in case you have an accident. Just saying.
