“Good things come from unexpected places.”

On a recent trip to the market I had sweet potatoes on my shopping list.  It was then that I came across a Japanese sweet potato.  I like to try the untried, which generally is a delightful discovery except for that one time when I was young and naive and …  Whatever.

When I got home I was anxious to try this particular sweet potato so I put it into the oven along with a sealed pack of garlic, onions, and Brussel sprouts that were lightly sprinkled with coconut oil.

When everything was done, after an hour at 385 degrees, I cut open the sweet potato and discover that its inside was white, bordering on a creamy yellow.

However, its taste was amazingly like a sweet potato.  Winner!  There was nothing more to do but top the potato with the baked goodies and crown it all with a diced avocado.

Notice the delightful sprig of parsley.  OK.  Maybe a little diced red pepper for color would have been nice.  For company I would do that.  I’m a good woman.
