ITALIAN POTATOES

As some of you know I’m on a quest to find different ways to use pasta sauce, as I’ve just made a double batch.  My first inclination was to cook up some spaghetti that’s been haunting my cupboard for some time.  But, I also had a bag of potatoes that were looking for some loving.  What to do?  Idea!

INGREDIENTS:

potatoes

pasta sauce

melty cheese, yes, I have some Velveeta in the fridge

Parmesan or mozzarella cheese

DISTRUCTIONS:

So here’s my idea.  Wash and dice the potatoes.  Peel if you choose.  Boil until the potatoes are tender, but not too tender.  Stir in a few chunk of melty cheese.

Place the potatoes, now beautifully cheesed up, in a casserole dish, maybe an 8 or 9 by something.  Top with pasta sauce and sprinkle with a bit of parmesan or some mozzarella.  Bake for about 20 minutes to get the whole thing bubbly.

The beginning, cheesy potatoes, and the finished product.  No, those are not mini-marshmallows on the top.  They’re mozzarella balls that I had left over from a tomato basil salad.

Serve with a side of grilled sausages and, if my husband is dining at your home, a side of buttered peas.  If I’m there, make it broccoli.  In our home, I do both.

OK.  This whole thing is coming together and possibilities are flying through the air.  You could also put a layer of pizza toppings between the potatoes and the layer of pasta sauce.  This could include a meat of some kind which means it’s a one dish meal!

I might have to rename this blog post, Potato Pizza.  Oh, the places we’ll go!
