Another yummy recipe simplified with the use of pasta sauce. It’s quick and easy and has enough garnish selections to make it absolutely perfect for your taste buds.
chicken – my choice is generally boneless, skinless thighs, about 6 for this recipe
1 T curry powder
1 chopped onion
1 cup diced bell pepper, your favorite color or colors
2 cups pasta sauce
OPTIONAL GARNISHES might include slivered almonds or raisins or flaked coconut or all of the above.
In a skillet, cast iron if you have it, brown the chicken parts in the olive oil and curry powder. Add the onions and peppers and let them cook together for about two minutes to give the flavors a chance to blend.
Add the pasta sauce and simmer until the chicken is cooked through. I usually cover the skillet for about 10 minutes and start the process on a low heat. Then I uncover to finish.
Love this over rice. Another recipe that’s better the next day. Better yet if you can get someone else to cook it for you.
