ULTIMATE TUNA SALAD

“In my defense – I was unsupervised.”

As we drift into a series of hot days I drift back to my favorite summer salad.  The best part of this salad is that it contains as much or as little as you care to add.  And it goes like this.

INGREDIENTS:

large can of tuna, drained – Bumblebee is my favorite

red pepper, diced

celery, diced

onion, diced

carrots, diced

peas

green beans

mayo

S&P

DISTRUCTIONS:

Combine everything in amounts that make you happy.

I topped my serving with a half avocado, diced, of course.

This keeps in the fridge for about a week unless you can’t control yourself and eat it all up in a day or two.  It’s that delicious.

Yes, you can substitute chicken for tuna.  You could even use slivers of roast beef.   Yes, you can serve this over greens.  What a great way to get your quota of veggies for the day!  Give it a try.
