“You can tune a guitar but you can’t tuna fish.  Unless you play bass.”

Recently I made a LARGE batch of tuna salad.  OK.  It was wonderful the first two days then quickly descended into good.  I got to wonder if there was some way to tweak this great salad to nudge it back up to wonderful.

Then I found this recipe for tuna patties that had a bit of veggies in the ingredients.  I wondered if I could use my tuna salad recipe with mega veggies and mayo and have some success.  I was about to find out.

1 medium sized sweet potato, baked, peeled, and mashed

2 cups tuna salad

2 eggs

4 T almond flour – you might have to adjust this

1/2 t smoked paprika

a few shakes of hot sauce

Preheat oven to 400 degrees.

Mix everything together.  Form into patties.  I used a scoop and made about twenty small mounds which I flattened slightly.

Spray a baking sheet, use parchment paper if you like, and bake the patties for about 20 minutes.  Flip them midway with a spatula.

These are delicious with a dab of mayo.  And, just like the original tuna salad, these are chock full of veggies.  I believe that these are going to be delicious cold.  A nice quick snack or lunch.  More delicious in my life!
