“An apron is just a cape on backwards.”

No, this is not a blog about religion.  But it is about beliefs.  In some cooking styles there are sacred combinations of veggies and peppers that are believed to bring a dish to peak flavor.  There’s the combination of onions, peppers, and celery for one.  I have my own go to trinity.


oil or ghee

onion, chopped

peppers, cut in strips

mushrooms, sliced


Put everything into a pan.  Saute.  Use immediately or store in a jar in the fridge.  Full disclosure – I use bags of frozen pepper strips and sliced mushrooms.  I am blissfully lazy.


The reason this is my favorite veggie trinity is because I love all the ingredients in this combination.  Also, this combination is a no-brainer to serve on burgers, chicken, or sausages.  You could also throw some of this into cooked rice, top with a slice of American cheese, and nuke it for a great side dish.  This combination is also great in omelettes.  Oh, the places you’ll go.


This is an example of being prepared for last minute company or a nutritious meal for yourself when you don’t feel like cooking.
