DATE WHIP

“Change in all things is sweet.”  Aristotle

I have no idea what Aristotle was talking about but the above quote had the words “change” and “sweet” and I’m trying to change sweet things I eat into healthier sweet things.  Something about cutting down on sugar, which I can really get into if I’m not careful.

Here’s a great recipe for a caramel-like dipping sauce that’s great with apple slices for a wonderful snack.  And as you probably know, apples are the ultimate, natural colon cleanser.  But probably don’t bring that up as an interesting meal-time topic of discussion.

INGREDIENTS:

16 pitted dates

1 t vanilla extract

1/2 cup coconut milk

DISTRUCTIONS:

Soak the dates in warm water for a bit.  One bit equals about an hour.  Drain.

Place all the ingredients into a blender or food processor and blend until the mixture is smooth and there are no date chunks.

Add more coconut milk if needed to bring this sauce to a lovely consistency.

FULL DISCLOSURE – I didn’t soak the dates.  They seemed soft enough.  I only had eight dates in the house.  I added coconut milk into the mix until I liked the consistency.  I was too lazy to walk across the kitchen to the cabinet and get out the vanilla.  The resulting product made it clear that the vanilla is probably superfluous.

I think this would also be delicious on waffles and/or ice cream.  Just saying.  You’re an adult.  Make your own choices.
