VEGAN COTTAGE CHEESE

Truthfully, I have nothing against regular cottage cheese.  But I do have something against a block of tofu sitting in the fridge and daring me to do something creative, or at least useful.  This recipe might be a bit of both.

INGREDIENTS:

1 block soft tofu

1 block firm tofu

1 T nutritional yeast

1 t apple cider vinegar

1 t lemon juice

1/2 t salt

DISTRUCTIONS:

Place everything into a blender or food processor except the firm tofu.  Blend everything until the mixture is smooth.

Pour this mixture into a bowl and crumble in the firm tofu.  Mash it a bit with a fork.  Place your creation into the fridge so it gets nice and chilled.  Your “cottage cheese” is ready.

I don’t think anyone ever snuggles up with a bowl of plain cottage cheese.  Think about it as a condiment that gives a bit of brightness to fruits or veggies.  Set the table with a pretty napkins.  Think of something cheerful to talk about.

Enjoy the moment.  They’re getting fewer and fewer.  Don’t waste them.
