CASHEW CHEESE SAUCE

“I promise to miss you if you go away.”

OK.  I made a promise to give you a recipe for a cashew cheese sauce.  I also wanted to begin this blog with a quote about promises but most of the quotes I found were maudlin.  I can live with the above quote.  I’m just a sentimental fool!

INGREDIENTS

1 cup cashews, soaked in water for about 2 hours

1/2 cup water, but not the soaking water

3/4 t salt

1 T fresh squeezed lemon juice

3 T nutritional yeast

dash of turmeric, which is optional

DISTRUCTIONS:

Drain the cashews.  Whip up the ingredients in a blender.  Make it creamy smooth.  If the mixture is too thick add additional water, drop by drop, until it comes to a nice consistency, which would be a consistency that you like.

I like my cheez a bit thicker.  I left out the additional water.

This would be delicious on the Cauliflower Nachos from yesterday’s post or on any roasted veggies.  This would also be useful for any other place that you’d be likely to use a cheese sauce.  Go crazy.
